Simple yet satisfying, this recipe contains an odd pairing of avocado with rice. I’ve learned avocado pretty much goes great with anything, so I’m never afraid to toss it into a shake, dessert, snack or entrée.
2 c brown rice, 1 avocado, 2 cloves garlic, fresh rosemary, dried basil flakes, sea salt, pepper, olive oil
Serves: 2 people
- Cook the brown rice.
- When the rice is about 2 minutes from being done, add in the spices and minced garlic.
- Once the rice is finished cooking, drizzle some olive oil and mix in the diced avocado.
- Serve, eat, enjoy!
