With so many salad recipe ideas out there, and always things missing or appearing in the fridge, I could dedicate a blog to salads. But I’m not going to. So for now, enjoy this vegan delight. The addition of the avocado makes you forget there’s no moldy blue cheese chucked in with the classic pear/walnut combo. You’ll get over it. Trust me, you eco-conscious, animal-loving, health nut, you.
1 head green leaf lettuce, 1 head red leaf lettuce, 1 avocado, 1 pear, 1/2 c baby carrots chopped, 1 cup chopped walnuts, olive oil, balsamic vinaigrette, salt, pepper
Serves: 4 people
- Um, it’s a salad. So rinse the veggies and fruit and then pile it all together. I recommend cubing the avocado and pears so that you have a higher guarantee of them with each bite! Don’t forget to chop the carrots and walnuts.
- The dressing is simple. Just sprinkle olive oil, balsamic and salt & pepper to taste. Go easy on the balsamic—you know a little goes a long way.
