Enjoy this alternative to a full-fledged fruit salad with some fresh winter delights and homemade dressing.
For the salad: 2 c loosely packed fresh Spinach leaves, 1 c pomegranate seeds, 1 Pink Lady apple (preferred), 1 clementine (peeled and separated)
For the dressing: 1/4 c olive oil, 2 Tbsp Dijon mustard, 1 Tbsp balsamic vinaigrette, 1/2 Tbsp apple cider vinegar, pinch of salt & pepper
Serves: 1 person
- Throw the salad bed together being sure to chop the apple and peel the clementine.
- Mix the salad dressing, taste test and pour atop the salad.
- Serve, eat, enjoy!
