Spinach Fruit Salad Recipe


Enjoy this alternative to a full-fledged fruit salad with some fresh winter delights and homemade dressing.


For the salad: 2 c loosely packed fresh Spinach leaves, 1 c pomegranate seeds, 1 Pink Lady apple (preferred), 1 clementine (peeled and separated)

For the dressing: 1/4 c olive oil, 2 Tbsp Dijon mustard, 1 Tbsp balsamic vinaigrette, 1/2 Tbsp apple cider vinegar, pinch of salt & pepper

Serves: 1 person


  1. Throw the salad bed together being sure to chop the apple and peel the clementine.
  2. Mix the salad dressing, taste test and pour atop the salad.
  3. Serve, eat, enjoy!
