Apple, Green Onion & Cilantro Salad


Hello, sweet and oniony flavoring with a hint of… Mexican? I really had low expectations for this dish but the experiment paid off. Now I have a unique flavoring to add to salads if I’m bored with the same old same old.


For the salad: green leaf lettuce, 1 apple (pink lady preferred), 1/4 c chopped carrots, 1 chute green onion*, 4 sprigs fresh cilantro, 1/4 c raw sunflower seeds

For the dressing: 1/4 c olive oil, 2 Tbsp Dijon mustard, 1 Tbsp balsamic vinaigrette

*Can replace green onion with 1/8 c minced yellow onion

Serves: 1 person


  1. Chop the apple, carrots, green onion and cilantro. Toss them onto a bed of lettuce.
  2. Whisk the salad dressing ingredients until thoroughly mixed. Pour over the salad.
  3. Sprinkle some sunflower seeds on top.
  4. Serve, eat, enjoy!
